Sacher Torte – Austrian Chocolate Cake

This is the best Austrian chocolate cake. It´s a classic called Sacher Torte. You can put any marmalade you want but the original comes with apricot marmalade.

Sacher Torte

You need:

  • 130g of dark chocolate
  • 130g of butter (room temperature)
  • 40g of icing sugar
  • 5g of vanilla sugar (or vanilla essence)
  • a pinch of salt
  • 6 yolks
  • 6 egg whites
  • 180g sugar
  • 130g of flour
  • Icing:
  • 400g of apricot marmalade
  • Chocolate icing/frosting (ready to use)

Here it goes:

Preheat oven at 190°C. Melt the chocolate in a water bath and stir it with a spatula. Add butte, icing sugar, salt and vanilla sugar. Stir until creamy and slowly add the egg yolks. Whip egg whites until stiff and add the sugar. Alternately fold in the flour and the egg white to the chocolate mix. Butter the inside of the form and sprinkle in some flour. Put in the batter and put into the oven for about 60 minutes. Once the cake is ready let it cool down on some baking paper then cut it in half (horizontally). Spread some marmalade on the bottom half and put the top part back on. Then spread the entire cake with a thin layer of marmalade (it helps when you slightly warm up the marmalade). Then melt the chocolate icing/frosting and spread it on the cake. Let it cool down in the fridge for a while.

Sacher Torte is best served with whipped cream and creamy cafe latte.

PS: In the picture you can see what happens when you don´t let it cool down in the fridge. It was so hot, half of my frosting melted away…  But it was still delicious ;-)
